I decided to make a healthy dinner post workout that included quinoa. I had used it once before but never liked it much. However, this time around, I felt differently.

Ingredients:
1/2 Cup Quinoa
1/2 Cup Shredded Chicken
1/2 Cup Broccoli Florets
1 Garlic Clove (diced)
1/2 Tsp Black Pepper
1/4 Tsp Red Chilli Pepper
2 Tbsp Soy Sauce
Directions:
First, cook your quinoa by following the directions on the back of the package.
While that is cooking, add two tbsp of olive oil and diced garlic to a pot. Let that heat up. Then add your broccoli florets. Let that cook for a couple of minutes. Add your shredded chicken, black pepper, and red Chili pepper.
Once your quinoa has cooked, add it to your broccoli and chicken mixture. Then, finish off with any seasoning you like. I used soy sauce. It was so delicious. My husband and I really enjoyed it. If you love to eat rice, then this is a much healthier alternative.
